The recent Multi-Sensory Immersive Dining Experience, hosted by Spa Ceylon and Shangri-La Colombo in collaboration with Mastercard, was one such evening. Designed to redefine what fine dining can feel like, the event blended gastronomy, technology, and wellness into a single coherent journey, one that seamlessly transported guests quite literally, from sea to forest.

An Atmosphere That Responded to Guests

The concept was simple yet ambitious: elevate dining beyond taste, and allow every sense to participate. As guests stepped into the venue, they were met with shifting seascapes and rainforest vistas projected across the room — sweeping blues, deep greens, filtered sunlight, coastal textures. Soft, immersive soundscapes recreated the pulse of the ocean and the hush of ancient Ceylonese forests.

Elegant décor, layered foliage, ambient lighting, and Spa Ceylon’s signature aesthetic completed the scene, building an atmosphere that felt fluid, responsive, and intentionally multi-dimensional.

A Guided Journey Through Aroma and Texture

Before dinner was served, Spa Ceylon Co-Founder and Group Director, Shalin Balasuriya, led guests through a sensory wellness experience crafted around the brand’s newly launched SeaVeda and ForestVeda ranges.

This wasn’t a product showcase,  it was a moment of grounding. A shift in pace.

A Menu That Told a Story

Shangri-La Colombo’s Executive Chef, Patrick Buttgereit, then extended that sensory immersion through a five-course menu designed to mirror the sea-to-forest progression.

The meal opened with dishes celebrating the ocean’s depth — clean, bright flavours that felt refreshing and quietly complex. From there came plates inspired by sandy shores and rock-salted coastlines: subtly earthy, textural, evocative. The journey then shifted inland, exploring the island’s forested richness, with Ceylon tea, spices, and locally sourced herbs adding warmth and narrative.

Each course arrived styled with Spa Ceylon’s Palaceware tableware, adding a refined visual rhythm to the experience.

By the final course, it was clear:  this was not just dinner. It was a calibrated, sensorial arc.
